SAUCE:

1 T olive oil
4 large plum tomatoes, finely chopped
Salt & pepper to taste
2 cloves garlic, finely chopped
1 tsp thyme
1/2 cup chicken broth
1/4 cup black olives, finely chopped

CHICKEN:

4 whole skinless chicken breasts
2 T olive oil
2 T lemon juice
Grated Parmesan cheese

SAUCE:

Heat oil in skillet. Add tomatoes, salt and pepper and cook on high for 2 minutes. Add garlic and cook 1 minute. Add thyme, broth, lemon juice and olives, Simmer for 3 minutes.

CHICKEN:

Pound chicken breasts until very thin. Rub chicken all over with olive oil. Grill, turning frequently, until they begin to char and the meat is opaque. Set on platter, sprinkle with lemon juice. Season with salt and pepper to taste. Spoon sauce don center, sprinkle with cheese and serve immediately.

NOTE: Instead of grilling, you may saute chicken breasts in a large skillet with 1 T olive oil.

You can make sauce in advance, refrigerate it and heat it just before serving.

Serve with angel hair pasta and Texas-style garlic toast.
