1 (2-1/2-3 lb) broiler-fryer cut in pieces
2-3 T olive oil
Salt & pepper
4 green onions (white part only), chopped
1 clove garlic, minced
1/2 cup white wine
2 tomatoes, peeled, chopped and seeded or 1/4 cup tomato sauce
1/4 tsp thyme
1 cup sliced mushrooms, sauteed
1 T parsley

Directions:
Directions:
In large heavy skillet cook chicken in oil til well browned. Remove to large bowl and sprinkle with salt and pepper. Saute onions and garlic; add wine, tomatoes, thyme, salt and pepper if needed. Bring to simmer, scraping bottom of pan to get all the bits. Add chicken to pan, cover and cook slowly until tender (30 min.). Add previously sauteed or canned mushrooms. Place chicken on platter and pour sauce over top. Garnish with parsley.
