2 cups firmly packed mint
4 c. water
5 c. sugar
1 box Sure Jell
green food coloring
tsp. butter

Directions:
Wash mint leaves; finely chop. Place in large saucepan; and water; bring to boil. Remove from heat; cover and let stand 10 minutes. Place 3 layer of damp cheesecloth in a large bowl. Pour mint water through cloth. Tie cloth closed, hang and let drip into bowl until dripping stops. Press gently to keep infusion clear. Measure 4 cups into 6 quart sauce pot. Stir in food coloring. Measure sugar into a separate bowl. Stir Sure-jell into water in saucepan. Add butter. Bring mixture to full rolling boil on high heat, stirring constantly. Quickly stir in all sugar. Return to full rolling boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon. Ladle into hot jars filling to within 1/8" of tops. Wipe jar rims and threads. Cover with lids. Screw bands tightly. Invert jars 5 minutes, then turn pright. After jars are cool, check seals.
