2¼ c. flour ( or 2½c. cake flour)
1⅔ c. sugar
⅔ c. Crisco©
1 tsp. salt
1¼ c. milk (divided ¾ c. & ½ c.)
4½ tsp. baking powder
5 egg whites
½ c. milk
1 tsp. vanilla

Directions:
Directions:
Prepare pans by rubbing with Crisco© and line with heavy waxed paper.
Pre-heat oven to 360º.
Measure into mixing bowl: flour, sugar, Crisco©, salt and ¾ c. milk.
Blend by hand or electric mixer on medium speed for two minutes.
Stir in baking powder.
Add egg whites, ½ c. milk and vanilla
Blend by hand or mixer on medium speed for two minutes.
Pour into two deep 9"X1½" layer pans.
Bake in moderate oven (360º) for 30-35 minutes.
When layers are cool, ice with chocolate icing - or your favorite icing.
