4 Servings Instant Mashed Potatoes cooled
1 Egg
½ tsp. Salt
2 tbsp. Onion (chopped or grated, or use onion powder)
Butter or Margarine

Directions:
Directions:
1. In large bowl, combine cooled potatoes with egg, salt & onion.
2. Melt 1 tbsp butter in a skillet over medium high heat.
3. Drop by heaping tbsp into skillet and flatten to desired thickness.
4. Brown on both sides, turn carefully.
5. Add more butter as needed.
6. Serve hot or room temperature.
7. Refrigerate leftovers.
