2 1/2 cups finely diced carrots
1 small onion, finely chopped
1/2 cup water
salt to taste
1 tablespoon honey
1/4 cup grits
2 tablespoons snipped fresh dill weed
1/4 cup sunflower seed kernels
1 egg, lightly beaten
1/4 cup sliced blanched almonds

Directions:
Directions:
Preheat oven to 350º. Boil carrots, onion, water and salt in a saucepan, cover and simmer about 20 minutes till carrots are barely tender. Stir honey, grits, dill, seeds and egg into carrot mix. Turned into oiled baking dish and sprinkle with almonds. Bake 15 minutes.
