1/2 c. chopped nuts
1 c. mashed bananas (2 large)
1-1/2 c. sifted all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. butter or margarine, soft
1 c. sugar
2 eggs
1 tsp. vanilla or 1/2 tsp. lemon extract
1/2 c. thick sour cream or 1/4 c. buttermilk

Directions:

Preheat oven to 350º.
Grease a loaf pan.
Sift together flour, baking soda and salt.
Combine butter, sugar, egg and flavoring in a mixing bowl. Cream on beat-whip speed for 1-1/2 minutes. Stop, scrape bowl, add mashed bananas, sour cream, chopped nuts and flour mixture. Beat on stir-mix speed for about 1/2 minute or until well blended.
Pour batter into a greased loaf pan. Pan should be approximately 2/3 full.
Bake in 350º oven for 1 hour or until done.
Remove from oven; cool on cooling rack; loosen and remove from loaf pan.
