1 carrot chopped
1/2 cup peas
2 baby bella mushrooms stems removed and chopped
2 garlic cloves chopped
fresh herbs parsley basil or cilantro chopped
2 cups filtered water
1 1/2 tsp better than buillion chicken base
1 1/2 cocoanut milk
1/2 c dried basmati or jasmine rice
1/2 tsp salt
1 tsp freshly groung pepper white ideal with chicken but black ok too

In a medium to large sausepan combine all ingredients and cook on medium until it starts to boil and simmer for 30 minutes
