1-1.5 lbs Stewbeef (1" flour salt pepper)
Avocado oil. (Cook beef and set aside)
2 medium yellow onions, chop small
1/2 rib Celery cur small
7 cloves garlic, peeled and smashed
2 tablespoons balsamic vinegar
1-1/2 tablespoons tomato paste (cook out above)

1 cup dry red wine
1 cup beef broth (or water with beef broth pwder)
1 cup water
1 bay leaf
1/2 teaspoon dried thyme
1-1/2 teaspoons sugar
Simmer in cast iron pot ... check after 2 hours

3 cups carrots and/or any veg.... including sweet potatoes (cut small)
3 cups potatoes (cut small) including sweet potatoes
Simmer covered for 2 plus hours (every hour check it veggies are cooked)

Fresh chopped parsley, for garnish (optional)
