2 chicken breast halves (6-8 oz each)
3 T olive oil

DIPPING MIXTURE:

2 egg whites
2 tsp cornstarch
Juice from half of lemon

CRUSTING MIXTURE:

1 cup coarse bread crumbs
1 T chopped parsley
1 tsp Kosher salt
1 T grated pepper
Zest of one lemon

Directions:
Directions:
Combine dipping mixture. Combine crusting mixture. Pound chicken breasts. Dip in dipping mixture and then crusting mixture. Saute chicken in olive oil at medium high heat, about 3 minutes -- golden brown and crisp. Roast chicken in pan in oven 8-10 minutes minutes at 450.
