2 c flour
4 tsp baking powder
¼ tsp baking soda
¾ tsp salt
2 T butter, cold
2 T shortening, cold
1 c buttermilk, chilled (replacement Add 2 tsp of lemon juice to reg. milk)

Directions:
Preheat oven to 450⁰. In a large bowl, combine flour, baking powder, soda & salt. Quickly with a knife cut butter & shortening into tiny pieces until mixture is crumbly. Make a well in the center & pour in buttermilk. Stir just until the dough comes together. The dough will be very sticky. Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 5 or 6 times. Press into a 1” thick round. Cut biscuits with a 2” cutter, Place biscuits on baking sheet so that they just touch. Reform scrap dough, working very little as to keep them as tender as possible then cut. Bake 15 to 20 until biscuits are tall and light gold on top, minutes.

I've not had much luck with scratch biscuits UNTIL this recipe. The are easy, light and fluffy.
