1-1/2 cups flour, divided
1 pkg quick-rising active dry yeast
1/2 tsp salt
1/2 tsp olive oil
1/2 cup warm water (115º to 120º)

FILLING:

1 lb bulk mild Italian sausage
3/4 cup chopped sweet red onion
2 T minced garlic
1/4 T crushed red pepper
1 pkg (10 oz) frozen chopped spinach, thawed and squeezed dry
1/2 cup skim-milk ricotta cheese
1/4 cup plus 3 T imported cheese
1/4 tsp salt
1/8 tsp fresh ground black pepper
12 oz (3 cups) whole or skim milk mozzarella cheese shredded
1-3/4 cup pizza sauce
1 egg beaten

Directions:
Directions:
Saute sausage until brown. Add onion, garlic, crushed red pepper until onion is softened (2-3 minutes). Add spinach, ricotta, 1/4 cup flour, salt pepper and mix well.

450º 15 minutes. Cover loosely with foil and bake 25 minutes more.
