1 1/2 tsp dried thyme
1/2 tsp dried fennel seeds
1/2 tsp crushed red pepper flakes
1 1/2 lb Greek feta, drained and sliced 1/2 " thick
3 sprigs fresh thyme
1/2 c olives
1/2 c good olive oil
salt and pepper
toasted pita triangles

Directions:
Directions:
Combine thyme, fennel seeds and red pepper flakes in a bowl. Lay feta slices, overlapping on a 9 X 9" serving plate.
Sprinkle feta with herb mixture. Nestle fresh thyme and olives among the feta. Drizzle with olive oil. Sprinkle with 1/2 tsp salt and 1/4 tsp pepper. Cover, refrigerate for at least 4 hours.
Serve at room temperature with pita triangles
