1 1/2 lbs. russet potatoes
3 1/4 tsp. salt
2 eggs
1 1/4 c flour

Directions:
Directions:
Wash and place salt, and potatoes in a large boiling pot (do not peel). Boil potatoes until soft and remove from the water. Peel potatoes and place in a ricer or mash with a fork. Spread potatoes out and allow the potatoes to cool completely. Place potatoes in a mixing bowl, add eggs and 1 c flour. Mix all ingredients together then knead dough until smooth (add extra flour as needed). Break quarter size pieces off and roll into a small ball. Bring a large pot of water to boil and add salt. Place gnocchi pieces into the water and let cook 4-6 minutes or until the gnocchi pieces float to the top of the water.
