Free stone peaches
apple juice
salt

Directions:
Directions:
Wash jars - check for chips and cracks
Wash rings
Boil rings and jars
Prepare apple juice - 1 litre apple juice + 2 cups water - bring to a boil
Heat lids to just reaching a boil
Heat water in canner
Blanche peaches 40 seconds
Put into ice water
Peel and put in bowl of cold water with 1/2 tsp salt to prevent browning
Slice peaches into prepared jars. Fill 7
Pour in hot apple juice. Remove all air by sliding knife along edge of jar
Clean rim of jar
Put lid and ring on - tighten firmly
Place in canner. Bring to a boil. Boil 20 minutes
Turn off heat and let sit 2 - 4 minutes then remove from canner
