Spanish Rice Recipe

2 tbsp oil
1/2 c chopped onion
1 bay leaf , crushed
1/4 c diced celery
1 tbsp minced parsley
1/2 c chopped green pepper
1 1/4 c raw rice
1/4 tsp tabasco
1 tsp salt
28 oz can tomatoes (diced)
7 1/2 oz can tomato sauce
2 c water

Heat oil and cook onion, bay leaf, celery, parsley and green pepper until tender. Add rice and cook, stirring constantly until lightly browned. Add remaining ingredients and cook 30 minutes or until rice is tender. If mixture becomes dry, add a little more water.
