2 lbs zucchini, sliced
1 onion sauted in stick of oleo
1 cup grated carrots
8 oz sour cream
1 can cream chicken soup
1 pkg stuffing mix (8-oz)

Directions:
Directions:
Combine stuffing mix with some oleo, place half of mixture in casserole pot.

Fry onion and margarine for 5 minutes, until tender. Mix with soup and carrots and sour cream. Add salt and pepper to taste, place over stuffing mix. Top with remaining mix.

Bake at 350 30-40 minutes.
