1 C chopped onion
2 medium carrots; quartered lengthwise
3 cloves garlic
1 tbsp olive oil
1 32 oz chicken beef or chicken broth
½ c water
1 recipe homemade meatballs (see recipe on this site)
1 9 oz. pkg. 4-cheese tortellini
1 tsp Italian seasoning
3 C chopped fresh spinach
3 tbsp. chopped bottled red roasted sweet peppers
1tbsp lemon juice
salt and pepper
1 tbsp. fresh basil

Directions:
In a dutch oven cook and stir onions, carrots and garlic ho, red pepper in hot oil for 3
min or until tender. Add chicken broth and water. Bring to boiling. Add meatballs, tortellini and itialian seasoning. Return to boiling. Reduce heat and simmer, uncovered, for 4 minutes. Add spinach, red pepper and lemon juice. Simmer uncovered, for about 3 minutes or until are done. Season with salt and pepper and add basil
