Pumpkin Roll Recipe

3 Eggs
1 cup sugar
2/3 cup pumpkin
1 tsp. baking soda
1/2 tsp. cinnamon
3/4 cup self rising flour
1/3 cup pecans

Spray a 10x13 cookie sheet with oil. Line with wax paper generously spray wax paper with oil. Pour pumpkin mixture onto cookie sheet. Bake at 350 for 15 minutes.

While baking sift powder sugar on a kitchen towel. Let cake cool in pan 10 minutes. Turn onto towel. Remove wax paper, roll cake up jelly roll fashion. Refrigerate for at least 15 minutes. Unroll and spread with filling, then reroll.

2 tbsp. butter
8 oz. cream cheese
3/4 tsp. vanilla
1 cup powder sugar
