2 large eggs
1 cup half & half (fat free is ok)
3/4 teaspoon salt
1/8 teaspoon ground white pepper
pinch of nutmeg
5 cups frozen corn kernels, divided
3/4 cup crushed oyster crackers
3 TB unsalted butter, melted, divided
1/3 C shredded sharp cheddar

Directions:
Preheat oven to 350º & grease a medium baking dish. In bowl, whisk together eggs, half & half, salt, pepper & nutmeg. Mix in corn, 1/2 cup of crackers & 2 TB melted butter. Spoon pudding into prepared dish & scatter cheese over top. Mix remaining crackers & butter, sprinkle over cheese. Dust w/paprika. Bake 45-50 minutes until puffed & golden w/brown crusty edges & soft center.
