6 eggs
2 cups sugar
½ cup lemon juice
¼ cup butter

Directions:
Directions:
Combine and cook over low heat whisking constantly until it thickens.
When cool, spoon into small pre cooked tart shells (be sure to get mini tart shells because the curd is so sweet a big one is too much)
Top off with cool whip (grandma’s favorite)

The curd will keep for a week in the fridge

Grandma only made a few things, but she did them very well. These tarts won't disappoint. And you can use the lemon curd for filling cakes.
