4 cups 1/2 inch thick sliced carrots
3 tablespoons butter
1 medium onion, finely chopped
1 10 3/4-oz cream of celery soup
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup shredded cheddar cheese
1/3 cup melted butter
1 cup herb stuffing cubes

Directions:

Preheat oven to 325º

Cook carrots in boiling water till tender, drain.

Melt 3 tablespoons butter in a skillet. Add onion & saute till tender. Combine w/soup. salt, pepper, cheese & carrots. Pour into casserole.

Combine 1/3 cup melted butter w/stuffing. Sprinkle over carrots.

Bake 20-30 minutes.
