Ingredients: 6 Egg Yolks 1 Stick of Butter 2 c Sugar 1 Tall Can of Cream (Evaporated Milk) 2 Tablespoons Vanilla 2 c Self-Rising Flour 1 1⁄2 c Chopped Pecans

Directions: |
Directions:Mix egg yolks, butter, vanilla and cream, stirring well. Slowly add flour and stir until well blended. Add chopped pecans and bake at 350ºF until the cake turns loose from the side of the pan. |

Ingredients: 2 c Sugar 4 tsp. Corn Starch 2 c Water 1 Pound Angel Flake Coconut 4 T Lemon Juice Pecan Halves

Directions: |
Directions:Put sugar, corn starch, and water in a sauce pan and bring to a hard boil. Cook 1 minute, remove from fire and let cool. Once cooled, add coconut and lemon juice and stir until completely mixed. Spread over cake and place pecan halves around the cake generously.

Notes: This recipe, as written was passed down through the generations from Grandma Eula Wax Achord to her daughter, Betty Francis Achord Thompson (my Mom), to me, then to my children, and now to my grandchildren. Neither Grandma Eula nor Mom would make this cake anytime other than Christmas. Grandma Eula would call and say “I made my Christmas Cake,ya’ll come get a piece”, and we went. After Grandma went to be with the Lord, my Mom took on the tradition. She would make the cake only once a year and we would all be sure to go visit so we could have a slice.
