1/2 cup chopped yellow onion
1/2 cup loosely packed fresh cilantro leaves
2 tablespoons vegetable oil
2 tablespoons fresh lime juice
1 jalapeno chile pepper, seeded and coarsely chopped
1 tablespoon minced garlic
1 1/2 teaspoons kosher salt
1 teaspoon ground cumin

1 1/4 pounds large shrimp (21-30 count) peeled, deveined, tails on

Your favorite salsa (optional)

Prepare the grill for direct cooking over high heat (450º - 550ºF)

In a blender combine the marinade ingredients and process until smooth. Put the shrimp in a large, resealable plastic bag and pour in the marinade. Press the air out of the bag and seal tightly. Turn the bag to distribute the marinade, place in a bowl, and marinate at room temperature for 10 - 15 minutes while the grill preheats

Remove the shrimp from the bag and discard the marinade. Thread the shrimp onto skewers. Brush the cooking grates clean. Grill the shrimp over direct high heat, with the lid closed as much as possible, until the shrimp are firm to the touch, lightly charred, and just turning opaque in the center, 2 to 4 minutes, turning once or twice. Remove from grill and serve warm with your favorite salsa, if desired.

Our family loves this shrimp. It's Thursday, February 16, 2017 today. Kurt is returning from a 60 day deployment in Qatar on Saturday. We're having a family gathering and this was one of the foods he requested. Welcome home Kurt - Glad to oblige!
