Ingredients:  
1 pkg Orange Flavoured Jello powder
1 to 2 cups grated carrots

Directions:
Directions:
1. Peel and grate 1 to 2 cups fresh carrots.

2. Prepare jello as per pkg instructions.

3. When just beginning to thicken, stir in grated carrots.

4. Serve on a bed of lettuce when set.

Sometimes, Mum would add walnuts to the carrot mixture, for a different texture.

I often made this salad when my children were young. Joshua did not eat vegetables; however, whenever I made this salad, he always took at least one helping. Another successful way to trick a non-vegan into consuming vegetables...I told him it was dessert!
