3/4 cup cornflakes
2 tablespoons pistachios, toasted
1 teaspoon grated lemon rind
1/2 tsp ea salt & pepper
4 4-oz chicken breast tenders
1 tablespoon honey
cooking spray
6 cups gourmet salad greens
1 tablespoon fresh lemon juice
1 teaspoon olive oil

Directions:
Directions:
Pulse cornflakes, pistachios, rind, 1/4 tsp salt & pepper in food processor to form crumbs & put in shallow dish.
Brush chicken w/honey, dredge in crumbs. Heat nonstick skillet coated w/cooking spray over medium heat. Add chicken & saute 4 minutes per side. Set aside. Place salad greens in a large bowl. Combine 1/4 tsp salt, 1/4 tsp pepper, juice & oil, drizzle greens, toss & serve w/chicken.
