1 pound ground beef
1/2 cup chopped onions
1 cup parboiled rice
1 can 10 1/2-ounce cream of mushroom soup
1 can evaporated milk
1 cup water
1/4 cup soy sauce (low-sodium)
dash pepper
1 3-ounce can chow mein noodles
4 oz can sliced mushrooms, drained

Directions:

Brown beef and onion in large skillet. Drain and add rice. Mix soup, milk, water, soy sauce, pepper & mushrooms. Simmer, stirring occasionally, about 30 to 35 minutes or until rice is done. Sprinkle chow mein noodles on top to serve.
