1 ½ graham cracker crumbs
⅓ confectioners’ sugar
6 T. Melted butter
⅓ cup Amaretto
10 oz. ricotta cheese
3 yolks
½ c. sugar
1 tsp. vanilla
16 oz. softened cream cheese
¼ tsp. salt
4 eggs, beaten
Fresh berries or slivered almonds

Mix together crumbs, confectioners’ sugar and butter; press over bottom and sides of greased 9" spring form pan. Chill. Preheat oven to 325ºF. Beat together ricotta and cream cheese until smooth. Add eggs and sugar; beat until smooth. Add remaining ingredients except fruit; beat until smooth. Pour mixture into pan. Bake 1 hour and 15 minutes or until firm in middle. Cool 20-30 minutes in pan before removing. Cool completely before serving. Top with berries.
