2 Green Onions, chopped
2 slices Bacon, cooked & crumbled
3 Tbsp. Cheddar Cheese, shredded
2 Tbsp. Cream Cheese, softened
2 Tbsp. White Mushrooms, finely chopped
¼ tsp. Garlic, chopped
1 pinch Dried Parsley
Salt & Pepper, to taste

1 Pork Tenderloin, butterflied & pounded flat
1 cup Bread Crumbs, dried

Directions:
Directions:
Preheat oven to 350ºF. Grease a baking sheet.
Mix green onion, bacon, cheddar cheese, cream cheese, spinach, mushroom, garlic, parsley, salt and pepper in a bowl. Spread onto one side of the pounded tenderloin. Roll tenderloin around the filling in jelly-roll fashion. Coat rolled tenderloin with bread crumbs; place on prepared baking sheet.
Bake in preheated oven until meat is no longer pink in the center, an instant read thermometer inserted into the center should read at least 145ºF.
