4 cups beef stock
Chop 1 small onion
1 stick celery &
1 carrot
1 teaspoon peppercorns
1/2 tsp each thyme & parsley
1 bay leaf
1/2 cup wild rice, cooked & drained
1/4 cup butter, softened
1/4 cup all-purpose flour
1/2 cup heavy cream
salt & pepper to taste

Directions:
Directions:
Combine beef stock, vegetables and spices in a large pot. Boil, reduce heat and simmer 15 minutes. Strain stock, discard veggies.

Combine butter and flour in large pot until smooth. Slowly stir in small amount of beef stock, whisking until well blended. Cook until thickened. Add rice and simmer 20 minutes. Stir in cream, season with salt & pepper. Heat through, do not boil.
