SALAD
1 head of Napa cabbage
1 bunch green leaf lettuce
1-2 bunches scallions, chopped

NOODLE MIX
½ stick butter
¼ cup olive oil
2 packages dry crumbled Ramen noodles (any flavor-discard seasoning mix)
½ cup sesame seeds
1 cup slivered almonds

DRESSING
⅔ cup sugar
1 cup white vinegar
1 cup vegetable oil
4 T soy sauce

Slice lettuce and add onions. Place in large bowl. Combine noodle mix ingredients in a large skillet and cook over medium-low heat until it starts to brown. Add noodle mix and dressing to salad just prior to serving. Everything can be done ahead--even the day before.

This recipe was shared with me by a co-worker who brought it to a staff luncheon. Its a great party dish because it makes alot. Don't combine it all if you won't be finishing it in one sitting.
