1 pkg. unflavored gelatin & 1/4 c. cold water
3 eggs (separated)
1/2 c. brown sugar
1 1/4 c. prepared pumpkin
1/2 c. milk
1/2 tsp. salt
1/2 tsp. ginger
3/4 tsp. cinnamon
1/4 tsp. nutmeg
1/2 tsp. allspice
1/2 c. sugar
1 prebaked pie shell

Dissolve gelatin in water; set aside. In a heavy saucepan combine together egg yolks, brown sugar, pumpkin, milk, salt and spices. Cook over low heat; stirring constantly until thick; then cool. While cooling beat egg whites in a large bowl and add sugar gradually until blended. When pumpkin mixture is cool add dissolved gelatin to mixture. Fold in egg white mixture until well blended. Pour into prebaked pie shell. Chill for 1-2 hours.

This is a pie that my grandmother made for Thanksgiving or Christmas. Never have eaten a better pumpkin pie.
