2 cups sugar
4 eggs, beaten
1 tsp vanilla
1 cup vegetable oil
3 1/2 cups flour
1 1/2 tsp baking soda
1 tsp salt
3/4 tsp baking powder
1 tsp cinnamon
2 cups zucchini, grated
1 cup raisins
1 cup walnuts, chopped

Directions:

Pre-heat oven to 350º

In a large mixing bowl, beat together sugar and eggs. Stir in vanilla, then oil. Set aside. In another bowl. combine dry ingredients, then stir into first mixture alternating with zucchini. Stir in raisins and nuts. Pour batter into 2 greased, floured 9 x 5" loaf pans. Bake for approximately 1 hour.
