Granny Koch's Oatmeal Cake Recipe

1 c. quick cooking oats
1 1/2 c. boiling water
1 c. brown sugar
1 c. white sugar
1/2 c. shortening
1 1/3 c. flour
1 tsp. soda
2 eggs, beaten
1/2 tsp. salt
1 tsp. cinnamon

Topping
6 T. butter or margarine
1/2 c. brown sugar
1/4 c. evaporated milk
1 c. shredded coconut
1/3 c. finely chopped pecans
1 tsp. vanilla

Directions:
Directions:
Pour water over oatmeal, stir, and let it set for 20 minutes.

Stir together all ingredient, add oatmeal. Bake in 9x13" greased pan at 350º for 30-40 minutes.

When cake is done, cook the topping ingredients until boiling. Spread over cake while hot and place under broiler of oven for 3 minutes or until lightly browned.

This was a recipe that my Granny Koch (Alma Louise
Bilhartz Koch) made when I was growing up. It is good served warm, and
even better served with a fresh cup of coffee.It's moist and good, and it keeps well. If there's any left, that is.

Gee, I miss that lady.
