1 pint of grape tomatoes, halved
1 yellow pepper, chopped
1/2 red onion, chopped
1 jalapeņo pepper, finely chopped
1 can black beans, drained and rinsed
1 tsp. lime zest
2 - 3 ripe avocados, peeled and chopped
1/4 cup lime juice (approx. 2 limes)
1/4 cup EVOO
1 tsp. minced garlic
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. cayenne pepper
Mix all salad ingredients, except for the avocados, in a large bowl.
Whisk all dressing ingredients in a separate bowl.
Pour dressing over the salad and toss gently.
Gently fold in avocado pieces and serve.
Note: It is best to add the avocados at the last minute and serve the salad immediately.
