1 15 oz. can Black Beans, drained and rinsed
1 15 oz. can Black Eyed Peas, drained and rinsed
1 11 oz. can Shoepeg Corn, drained and rinsed
1/2 jar jalapenos or green chilies, finely chopped
1 small jar pimentos, drained
1 small onion, finely chopped
1 cup celery, finely chopped
1 cup olive oil
1/2 cup vinegar
1 cup sugar

Directions:
Directions:
In a small saucepan add the olive oil, vinegar and sugar.
Bring to a boil.
Remove and cool completely.

Combine all ingredients.
Chill overnight.
Drain liquid and serve with Scoops.
