1 T. flour
1 T. butter
1 T. sugar
3 T. vinegar
1 egg, beaten
1 c. evaporated milk
2 eggs, hard boiled
1 small jar chopped pimentos
1 lb. Velveeta cheese
1/2 c. chopped pecans

Directions:
Directions:
Melt butter, add flour, sugar and vinegar. Add beaten egg and evaporated milk. Cook over low heat until thick, stirring often.

Cut Velveeta into small chunks and add to hot mixture. Stir until melted. Grate hard boiled eggs into mixture. Add pimentos and pecans.

Can be eaten as a dip with crackers or chips, or if you add only 1/2 cup evaporated milk, may be used as a sandwich spread. Granny served this for lunch during Lent.
