TO PREPARE PIE

4 cups frozen cherries, drained
1/4 cup cornstarch
1 1/4 cups sugar
1/2 tsp each of almond & vanilla extracts
2 tablespoons butter

1 Package Pillsbury Pie Crust

Directions:
Directions:
Prepare pie crust according to package directions, set aside.

Mix sugar, cornstarch and cherries in saucepan. Cook until thick. Add extracts and butter. Pour into prepared pie shell. Add top crust. Cut holes in top crust to vent, flute edges, cut off excess dough. Brush with milk and sprinkle with 1/2 teaspoon sugar.

Cover edges of crust to prevent over-browning. Bake 40 minutes in preheated oven set to 375º

Cool on wire rack.
 

CRUMB TOPPING OPTION


Ingredients:

1/2 cup slivered almonds
1/2 cup brown sugar
1/3 cup rolled oats
1/3 cup flour
3/4 teaspoon salt
6 tablespoons unsalted butter cut in pieces, slightly softened

Mix all with pastry blender. Chill 15 minutes, top pie and bake (Use for a single crust pie)
