3 tablespoons butter
12 oz spaghetti, broken in half
small can tomato sauce
1 14-oz can diced tomatoes
1 1/2 15 -oz cans chicken broth
1 large onion, chopped
1/2 tablespoon ground cumin
salt & pepper to taste
1 cup shredded cheddar cheese
warm tortillas for serving

Melt butter in skillet, add fideo noodles, stirring constantly till light brown. Add diced tomatoes, 1 can of chicken broth & 1 can of water, season w/salt & pepper, bring to a boil cover & simmer for 10-15 minutes. Add more broth if needed, then add cheese & serve w/warm tortillas.
