CHICKEN:

3 Chicken Breast, split, boned, skinned
1/3 c. Honey
2 T. Lemon juice
1/3 c. Flour
2 tsp. Salt
2 T. Curry powder
1/8 tsp. Pepper
1/3 c. Butter
3/4 c. Chicken broth
1/3 c. Golden raisons

RICE

1 Onion
2 T. Butter
3 T. Olive oil
1 c. Long grain rice
1 to 2 T. Curry powder
2 c. Chicken broth
1/2 c. Golden raisons

Directions:

CHICKEN:

Blend honey and lemon juice. Brush some on chicken, reserving the rest.
Shake chicken pieces in a bag containing the flour salt, curry powder, and pepper.
Heat the butter in a large skillet, add coated chicken and brown on all sides.
Transfer the chicken to a shallow baking dish.
Combine broth, raisins, and the remaining honey-lemon juice mixture.
Pour over the chicken. Cover and bake at 375 degrees for 15 minutes.
Uncover and bake 30 minutes more until chicken is tender.

RICE:

Saute onions in olive oil until translucent.
Add rice and curry powder then saute for another minute.
Add the chicken broth and raisins and bring to a boil.
Lower to simmer and cook for approximately 20 minutes.
