Ingredients:  
Ingredients:  
3/4 c.dry, rinsed quinoa
1 1/2 c. water
2 or 3 cloves minced garlic
small amount chopped spearmint
small amount chopped parsley
Chopped tomato , cucumber, onion, grated carrot or any other vegetable you like
dressing:
1/4 c.olive oil
1/4 c. lemon juice ( please juice your own lemon)
dash of balsalmic vinegar
dash of salt or pepper if desired

Directions:
Directions:
Cook raw quinoa in water until done.
Mix quinoa and vegtables in a bowl.
Pour dressing over quinoa and vegetable mixture, stir.
Cover and refrigerate.
Best if refrigerated at least several hours.

You may want to double this recipe.
