Cumin Coleslaw Dressing


Ingredients:

1 head Cauliflower, separated into florets
1 cup Sour Cream
1 cup Cheddar Cheese, shredded
½ cup Corn Flakes, crushed
¼ cup Green Bell Pepper, finely chopped
¼ cup Red Bell Pepper, finely chopped
1 tsp. Salt
¼ cup Parmesan Cheese, grated
Paprika, optional

Directions:
Directions:
Preheat oven to 350ºF. Grease a 2 quart baking dish.
Steam the cauliflower florets until crisp-tender, about 5 minutes. Drain and set aside.
Combine the sour cream, cheese, corn flakes, peppers and salt in a medium bowl.
Stir in the cauliflower, and transfer to the prepared baking dish. Sprinkle parmesan cheese and the paprika over the top of the dish.
Bake uncovered until heated through, about 30-35 minutes.
 

Coleslaw


Ingredients:

2 lbs. Cabbage, shredded
1/3 lb. Carrots, shredded
2 tsp. Cilantro, finely chopped

Directions:

Mix all the above ingredients in a bowl. Add the Cumin Coleslaw Dressing and blend well into the vegetables.

Personal Notes:
* Cilantro will lose its zing after 12 hours in the dressing, so add dressing close to the serving time.
