1 lb. ground beef

1 c. diced onion

1 small can enchilada sauce

1 small can tomato sauce

1 can large black olives (pitted)

12 corn tortillas

1 c. shredded Cheddar cheese

Directions:
Directions:
In skillet, brown meat and onions. Pour off grease. Add enchilada sauce and tomato sauce. Bring to boil. Cover and simmer
for 15 minutes. Meanwhile, drain olives and slice into thirds. In a round 1 to 2 quart casserole dish, put small amount of sauce on bottom. Next add 2 tortillas, followed by meat sauce to slightly cover tortillas, of the olives and of the cheese.
Continue to make layers, ending with meat sauce and cheese on top. over and bake 30 - 40 minutes at 325 or until sides of mixture bubbles.
