Pickled watermelon rind
Bacon
toothpicks

Directions:

Drain and pat dry watermelon rind. Cut into bite size pieces
Cut bacon slices into 3 pieces and wrap around each rind, securing with a tooth pick
Place on wire rack over a sheet pan Preheat oven to 425º
Bake 10-12 minutes or until the bacon is crisp
