4 small Eggplant
1/3 cup grated Cheese
1 egg
1/2 cup Bread crumbs
3 cloves Garlic
Olive oil
Salt and Pepper
Pasta sauce
Mozzarella

Directions:
Directions:
Cut eggplant in half long ways
Scrape inside and leave shell(skin)
In a skillet saute garlic when garlic begins to brown, add eggplant
Cook on low for about 8 min until eggplant is soft.
Place eggplant in bowl add egg, cheese, bread crumbs, salt and Pepper
Mix together, it should be paste-like
Fill eggplant shells
Place sauce in bottom of pan and add eggplant shells, top with sauce, grated cheese and mozzarella
Bake at 350º for about 30 min until cheese is melted

Add additional cheese if preferred and enjoy
