4 boneless skinless chicken breasts pounded to a 1/4 inch thick
4 cloves of garlic minced
2 ripe tomatoes diced
3/4 cup grated mozzarella cheese
1/2 cup parmesan cheese
1/3 cup low sodium chicken broth
1/3 cup fresh basil chopped
3 tbsp. balsamic vinegar
2 tbsp. olive oil
1 tsp. dried basil
1 tsp. dried oregano
1/2 tsp. red pepper flakes
salt and pepper to taste

Directions:

Combine tomatoes, parmesan cheese, and 1/4 cup of the mozzarella in a bowl. Stuffed chicken breast and roll them up tightly and secure with a toothpick.

Heat olive oil in a pan on medium-high heat. Once oil is hot add the rolled chicken breast and brown on all sides until cooked through.

In a bowl whisk together chicken broth, balsamic vinegar, garlic, dried basil, oregano, and red pepper.

Pour remaining bruschetta mixture and balsamic over chicken and continue to cook for another 10 minutes.

Top chicken with remaining mozzarella until melted and garnish with fresh basil.
