1 lb. ground beef
½ medium onion, minced
1 Tbls. minced garlic
1 quart stewed tomatoes
1 - 6oz. can tomato paste
2 tsp. salt
2 tsp brown sugar
1 tsp basil
1 tsp. oregano
1 tsp parsley
¼ tsp pepper

Brown ground beef, onion, and garlic. Drain. Add tomatoes, paste and seasonings. Simmer 30 minutes
 

Filling

½ lb ground beef
4 Tbls. green onion, minced
¼ tsp pepper
16 oz. container cottage cheese
2 cups grated Mozzarella cheese
1 egg
1 tsp. parsley
1 8oz. pkg Manicotti or Jumbo Shells, cooked and cooled

Directions:
Directions:
Cook ground beef, onion, salt and pepper. Drain and cool. Combine cottage cheese, Mozzarella, egg, parsley and beef. Fill cooked pasta with ¼ cup filling. Pour ⅓ of the sauce into a 9x13 baking dish; place filled pasta in a single layer. Cover with remaining sauce and sprinkle with Parmesan cheese. Bake, covered, at 350º for 30-40 minutes.
