6 eggs
2/3 c. of milk
2/3 c. of flour
apple
cinnamon and sugar

Directions:
Directions:
Heat oven to 400 degrees. Spray a 9 or 10 inch pie pan with nonstick cooking spray. Beat eggs together then add flour and milk. Whisk until blended. Pour mixture into pie pan. Peel apple and slice thinly. Put apple slices on top of egg mixture. Use as much or as little apple slices as desired. Place in oven for 20 to 25 minutes. Using a butter knife insert into baked eggs which should come out clean when done. Immediately sprinkle with cinnamon and sugar. Slice into wedges to serve.

This recipe can be cut in half and baked in a 6 or 7 inch pie pan.
