Ingredients:  
Ingredients:  
1 c. dry quinoa, cook in 2 c. water like you would cook rice. After it's cooked, cool it in a separate bowl
1 large green bell pepper
5-7 Serrano hot peppers
1 bundle green onions
1 small bunch of cilantro1 red onion
1 large tomato
1 can black beans (drain and rinse)
1-1.5 c. of frozen corn
2 limes
1 tsp salt

Cut and mix up all the veggies and squeeze the juice from the lime. Mix with cooled quinoa. You can serve it warm or cold, tastes good either way
