1 16oz. box of angel hair pasta
2 pounds hardwood chicken sausage, sliced
2 tbsp. butter
2 tbsp. olive oil
3 cloves garlic, minced
2/3 cup green onion, diced
2 tbsp. Cajun seasoning
2 tsp. paprika
13 oz. dry white wine or chicken stock
1 pint heavy cream
2/3 cup grated Parmesan cheese, plus more for garnish
2/3 cup grated Cheddar cheese

Directions:
Directions:
Cook pasta according to package directions and set aside.

In a large skillet, heat oil and add sausage; cook until seared for about 5 minutes. Push to side of pan and add butter. Let melt; then add garlic and cook until fragrant, about 2 minutes. Add onions and cook until soft, about 2 minutes more. Stir until combined.

Add the Cajun seasoning and paprika; stir until combined. Add the wine or chicken stock and then the heavy cream, stir and simmer until thickened for about 5 minutes.

Add the Parmesan and Cheddar and stir until melted and creamy. Add the pasta and toss to coat. Garnish with onions and Parmesan.
